Binder [Reminder] Clip

More often than not, I find myself forgetting to take something with me when I leave the house on an errand, or to work. So my solution? I attached a binder clip to my keyring. When I have something to take with me (checkbook, grocery list, mail, etc.), I clip it to my keys, making it quite difficult to leave important items behind. Sure, I too have tried leaving my keys on top of items, but this method is sure to make remembering that much easier.

Brown Bag Popcorn

This is so much better than that microwave stuff! I.WILL.NEVER.GO.BACK!

Ingredients
1/4 cup popcorn kernels
2 teaspoons olive oil
1/4 teaspoon salt
Paper lunch bag

Directions
Toss the popcorn, olive oil, and salt in the paper bag. Fold the top of the bag over 3 times to close. Place the bag in the microwave, and microwave on high for 2 to 3 minutes, or until there are about 5 seconds between pops.

French Toast Casserole

Saw this recipe while searching the web, but decided to make some health-conscience adjustments. Delicious!

Ingredients:

1 ½ loaves cinnamon bread, cut into 1” cubes
8 oz. light cream cheese
12 eggs
2 cups fat-free milk
2/3 cup syrup
1 teaspoon sugar
1 teaspoon cinnamon

Directions:

Spray 13 x 9 casserole dish with nonstick spray. Put half of the cubed bread into the bottom of the prepared pan. Cover with the cream cheese. In a small mixing bowl, mix together the sugar and cinnamon. Sprinkle casserole with half of the sugar mixture. Cover remaining bread cubes. In a large mixing bowl, whisk together eggs, milk and syrup. Pour mixture over bread. Sprinkle top with remaining sugar mixture. Cover and refrigerate over night.

In the morning (or whenever you are ready to serve =P ), pre-heat oven to 375 then bake for 40 to 45 minutes. Serve hot with syrup.
